Guido Castagna Madagascar Bar - 76% Lacrí Blend

In all honesty I don't buy a lot of dark chocolate anymore; milk chocolate and filled chocolates would always be my first option when choosing a chocolate treat - my sweet tooth seems to rule over my decision making process and the fact that finding good chocolate available near me, apart from ordering online, is often quite difficult.

That's not to say that I don't enjoy a good bar of dark chocolate; in fact this bar was so good that it had me questioning why I don't eat it more often; there's something about the richness, complexity and depth of dark chocolate that makes it a far longer lasting experience compared to its milk counterparts.

Made with beans from Madagascar this bar looks the height of quality; sleek packaging, the chocolate lightly wrapped and the bar having the perfect sheen and a gorgeous ripple/wave-like design. The melt is rich and sumptuous and the flavour profile experienced when a morsel is popped into your mouth is superb.

Starting off  relatively bitter with the slightest hint of spice/chilli before leading way to lighter, fresher, fruitier flavours and I even picked up on a tang of fresh mint! For a bar at 76% you would think that this would be deep and robust; however this bar leaves your mouth feeling refreshed and its quite easy to pop back a few more pieces!

In terms of quality both in flavour experienced and melt in the mouth this bar is excellent; I even made a chocolate ganache with some of this chocolate to pop on top of a cake I was making - without a doubt the ganache was the BEST I have ever made. Superb.

Taste - 8.9/10 - Great, complex flavour profile, leaving the mouth feeling refreshed.
Texture - 9.3/10 - Excellent, smooth, truffle like melt.
Appearance - 8.9/10 - Elegantly packed and a gorgeous bar design.
Price - NA - These were being sold on but the website doesn't seem to be opening recently and on Guido Castagna's website there is no sign of a price.
Overall - 9/10 - Worth seeking out.
WHO FOR?Anyone looking for a dark chocolate bar that isn't too bitter.

As stated above this bar may pose a little difficult to find; but it's definitely worth tracking down if you can/
